This smoothie is perfect for breakfast or a mid-afternoon snack. It incorporates a full serving of iron-rich spinach and has no added sugars (unless you top it with granola or add a sweetener of choice).
Serves 1 as a breakfast smoothie or 2 as a snack.
- 1/2 cup (any kind you prefer: cow’s, almond, soy, etc)
- 1/2 cup Greek yogurt (plain OR flavored)
- 1/2 cup berries (fresh OR frozen)
- 1 small banana (fresh OR frozen)
- 1 cup baby spinach (tightly packed)
- 3-5 ice cubes
- 1 TBSP ground flaxseed
- T TBSP chia seeds
- 1 scoop protein powder
- Fresh mint leaves
- 1 TBSP honey, agave, or Sucanat (if you prefer it a bit sweeter)
In a blender, layer spinach, banana, berries, Greek yogurt, milk, and any add-ins. Make sure you put the spinach in first at the bottom so it can get well-blended and not stuck to the sides or lid of the blender.
Blend until smooth then add 3-5 ice cubes and pulse until well-blended. You may need more or less ice depending on whether your fruits are frozen or fresh and how thick you like your smoothie.

Note: You can divide the smoothie in half and pour into 2 small plastic cups and freeze to enjoy later. Place in the refrigerator to defrost before sipping.
