Homemade Breakfast, Away From Home

Whole Wheat Pancakes with Flaxseed

There’s nothing like a long week at the beach, lake, or the Grandparents house to catch up as a family and enjoy the summer together. Instead of relying on fast-food breakfasts, greasy diners, or sugary cereals for your morning meal, why not bring all of the ingredients you need for a hearty and healthy breakfast with you to make on vacation? Kicking off your vacation days with these Whole Wheat Pancakes with Flaxseed will keep you charged up for long days of fun and sun!

INGREDIENTS

Dry:
1 cup stone ground whole wheat flour
1/2 tsp. sea salt
1 TBSP flaxseed (or ground flaxseed meal)
1 TBSP baking Powder

Wet:
1 Large Egg
2 TBSP melted unsalted butter
1/4 cup 2% or Fat-Free Greek Yogurt
3/4 cup water
1/4 cup pure Maple Syrup
1 teaspoon pure vanilla extract

Toppings: Mixed berries, Low-fat cottage cheese, Fruit preserves, Nut butter of choice

DIRECTIONS:
Combine the dry ingredients and mix with a fork in one bowl.Whisk the liquid ingredients together in a separate bowl and then quickly stir into the combined dry ingredients just until blended.

Drop batter in 1/4 cupful onto a heated greased griddle. Cook until bottoms are golden and small bubbles start to form on top, 3-4 minutes. Flip and cook until the other side is browned, 1-2 minutes.

Top and enjoy! Makes 4 to 6 servings.
