Baked Chicken Tenders with Greek Yogurt Ranch Dressing

Chicken tenders can be enjoyed by both kids and grown-ups in these whole wheat-crusted chicken strips. And they’re baked so you can have these guilt-free, dipped in a light Greek yogurt ranch dressing.

Cook time: 16-18 minutes

Ingredients:

For the Greek Yogurt Ranch Dressing:

  • 1/2 cup Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Kosher salt
  • Freshly ground black pepper

For the Chicken Tenders:

  • 1 pound boneless skinless chicken breasts, cut into 1-inch strips
  • Kosher salt
  • Freshly ground black pepper
  • 2 cups whole wheat bread crumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup all-purpose flour 
  • 2 large eggs, beaten

Directions:

1. In a small bowl, whisk together Greek yogurt, mayonnaise, garlic and onion powder, salt and pepper, to taste. Set aside in the refrigerator.

2. Preheat oven to 450 degrees F. Place a cooling rack inside a baking sheet and spray with cooking spray. Set aside.

3. Season chicken strips with a pinch each of salt and pepper

4. In a large bowl, combine bread crumbs, garlic and onion powder. Set aside. In a separate bowl, add flour. In a separate bowl, add the beaten eggs.

5. Working one at a time, dredge chicken strips in the flour, dip into the eggs, then into the bread crumb mixture, pressing to coat.

6. Place breaded chicken strips on top of prepared rack. Place into oven and bake for 8 minutes. Flip each strip over and lightly coat with cooking spray. Continue baking for 8-10 minutes, or until crisp and golden brown.

7. Let rest about 5 minute before serving with Greek yogurt ranch, if desired.
